White Chocolate-Raspberry Cheesecake Bars
12 Oreo cookies, finely crushed
2 T melted butter
3 oz white chocolate squares, divided
16 oz cream cheese, softened
1/2 c sugar
1 t vanilla
1/4 c raspberry preserves
Heat oven to 350.
Mix Oreos and butter and press into the bottom of a square baking dish.
Beat cream cheese, sugar and vanilla in a bowl. Melt 2 oz of the white chocolate and mix into the cream cheese mixture. Add one egg at time to the mix until blended. Pour over crust and bake for 25 minutes or until center is almost set. Let cool for 5 minutes. Pour preserves over top and spread evenly. Melt remaining chocolate and drizzle over top. Cool completely and refrigerate for 4 hours. Cut into bars to serve.
