{Thick and Chewy Triple Chocolate Cookies}

Oh my goodness! One of these babies will cure the average chocolate craving for a week and a pregnant chocolate craving for at least a few hours. Wow!
Thick and Chewy Triple Chocolate Cookies

CAUTION:
These cookies contain LOTS of chocolate!
Your regular physician may not consider these healthy but your psychologist may recommend them anyway

What You'll Need:
2 cups (10 ounces) all-purpose flour
½ cup (1½ ounces) Dutch-processed cocoa powder {I used regular cocoa powder}
2 teaspoons baking powder
½ teaspoon salt
16 ounces semisweet chocolate, chopped {I mixed dark, semi-sweet and unsweet}
4 large eggs
2 teaspoons vanilla extract
2 teaspoons instant coffee or espresso powder
10 tablespoons (1¼ sticks) unsalted butter, softened but still cool
1½ cups packed (10½ ounces) light brown sugar
½ cup (3½ ounces) granulated sugar
12 ounces (about 2 cups) semisweet chocolate chips {I used milk chocolate}

What To Do:
In a small bowl wisk the flour, cocoa powder, baking powder, and salt.
Melt the semi-sweet and bittersweet chopped chocolate in medium heatproof bowl. Be careful not to scorch or burn chocolate. Set aside to cool.
In a small bowl wisk the eggs, vanilla and Espresso powder until combined.
In a mixing bowl, beat the butter until smooth and creamy. Add sugar and beat another minute. Add the egg mixture until well mixed. Gently add the melted and cooled chocolate and beat until combined  Slowly add the flour mixture and beat until just combined. Do not overbeat.
Cover with dough with lid or plastic wrap and let stand at room temperature until consistency is scoopable and fudge-like, about 30 minutes.
Preheat oven to 350.
 Line baking sheet with parchment paper. Scoop dough onto sheet and bake for 10-12 minutes or until edges are set but centers are soft. 
Allow cookies to cool on sheets about 10 minutes before transferring to racks to cool completely. 
 Optional Step... brew cup of your favorite coffee or pour tall glass cold milk, 
place two cookies on a plate, sit in your favorite cozy seat, and enjoy.
